I've got a first version doing the basic stuff ready and working here already. So you could leave this "field-list-table" topic up to me. I will continue that work when there's a next time slot free. Currently my code isn't written well and I want to add "rowspan" and "colspan" capabilities. That's a bit more tricky. And I'm not sure yet what kind of :options: should be possible. So I've switched to improving an existing 'html2rst' converter to also handle tables. I am dreaming of roundtrip capabilities: html -> rst -> html -> rst -> ... with table structure being maintained.
